Die Tierproduktion ist nach wie vor die wichtigste Proteinquelle für die menschliche Ernährung.Es entstehen jedoch mehr und mehr Alternativen auf der Basis von pflanzlichen Eiweissen. Die 8. Nationale Ackerbautagung behandelt die wirtschaftlichen und agronomischen Voraussetzungen, die erfüllt sein müssen, um eine solche Entwicklung in der Schweiz zu fördern. Thematisiert werden auch die dafür notwendigen Anpassungen der verarbeitenden Industrie sowie das sich wandelnde Konsumentenverhalten in Bezug auf diese neuen Proteinformen.
